Zucchini Slice

Zucchini Slice
A savoury, golden Zucchini Slice with crispy bacon, zucchini and melted cheese in a light, fluffy base—perfect for a quick, flavour-packed meal.

Ingredients

  • 150g bacon 
  • 1 Onion 
  • 5 eggs 
  • 100g Gluten Free Self-Raising Flour 
  • 1 tsp GF Baking Powder 
  • 380g Grated zucchini 
  • 80g cheddar or tasty cheese (plus a little extra to top) 
  • 60ml Olive oil 

Method

  1. Finely dice the onion and bacon.
  2. Heat up a bit of oil in a pan or in your i-Companion. Add the onion and bacon and cook on medium heat until softened. This should take 5 minutes.
  3. Allow to cool a little bit. In the same pan or i-Companion bowl, add the eggs, flour and baking powder.
  4. Stir until the mixture is well combined.
  5. Add the zucchini, the 60 ml of olive oil and grated cheddar. Mix in gently. 
  6. Pour mixture into a lined springform tin, sprinkle with a little extra cheese.
  7. Bake at 160°C for 30 minutes. Allow to cool for 10 minutes and serve.
