Strawberry and Chocolate Tartlets

Ingredients

  • 200 g plain flour
  • 110 g cubed butter
  • 2 egg yolks
  • 100 g icing sugar
  • 1 pinch of salt
  • 100 g baking chocolate
  • 100 ml double cream
  • 50 g cubed butter
  • 150 g strawberry jam
  • 400 g strawberries

  • 12 tartlet moulds

Method

  1. Prepare the shortcrust pastry: work the flour, butter and a pinch of salt with your fingertips until you achieve a fine sandy texture. Add the icing sugar and egg and keep mixing by hand, until you have an even consistency. Place in the fridge for 1 hour.
  2. Roll out the dough on a lightly-floured worktop. With a pastry cutter, cut out 6.5cm circles of pastry. Place the pastry circles into tartlet moulds and press around the edges to make the tartlet bases.
  3. Place in a Tefal Air Fryer and bake at 220°C for 13 minutes (check after 10 minutes to ensure they do not overbake). If your air fryer does not reach 220°C, use 200°C instead and adjust the baking time accordingly. Alternatively, preheat your oven to 220°C. Place the tartlet moulds on a baking tray and bake in the oven for 13 minutes.
  4. Leave the pastry bases to cool then put in a little strawberry jam.
  5. Put the chocolate, cream and butter for the sauce into the tin. Put the tin into the Cake Factory. Start programme P5 for 5 minutes. Smooth the sauce with a small whisk. Divide between the tartlet bases. Place a strawberry on top of each tartlet. Store in the fridge.
