Shakshuka

Shakshuka
A vibrant Shakshuka with spiced chorizo, harissa and poached eggs in a rich tomato sauce, served with crusty bread for a bold, flavour-packed meal.

Ingredients

  • ½ chorizo sausage finely chopped 
  • ½ onion finely chopped 
  • 1 clove garlic crushed 
  • 1 tbsp olive oil 
  • 1 tbsp butter 
  • 1 tbsp tomato paste 
  • ½ capsicum finely sliced 
  • 1 can crushed tomato 
  • 1 tbsp harissa paste 
  • ½ tsp cumin  
  • 4 eggs 

Method

  • In a pan, fry the onion, garlic and chorizo in the butter and oil on a medium heat.
  • Once the chorizo mixture is soft (but not yet browned), add the tomato paste, cumin and harissa paste and turn up the heat 
  • When bubbling, add the capsicum and stir for a minute  
  • Add the canned tomato and reduce the heat  
  • Allow to simmer for 30 minutes, season with salt and pepper  
  • After 30 minutes, turn off the heat and the warmed sauce to a Tefal Air Fryer Pizza Pan Accessory 
  • With a wooden spoon, make a small well in the sauce. Crack your eggs and place into the hole  
  • Repeat until all 4 eggs are sitting in the tomato harissa sauce  
  • Air fry for 4-6 minutes, depending on how firm you like your eggs  
  • Serve on toasted sourdough or ciabatta 

Tip: Vary the amount of harissa sauce depending on how hot you like your sauce
