Healthy Granola Bars

Healthy Granola Bars

Ingredients

  • 1 ½ cups rolled oats 
  • ½ cup almond or oat flour 
  • 1 tsp salt 
  • ¼ tsp cinnamon 
  • ½ cup desiccated coconut 
  • 1/3 cup sugar 
  • ½ cup almonds 
  • ½ cup macadamias 
  • ½ cup pistachios 
  • ½ cup sunflower seeds 
  • ½ cup pepitas 
  • ½ cup dried cherries (or cranberries) 
  • 1/3 cup coconut oil 
  • 1/3 cup butter 
  • 1/3 cup honey 
  • 1/3 cup maple syrup 
  • 2 tsp vanilla extract 
  • Sea salt flakes 

Method

  1. In a large bowl, mix the oats, flour, sugar, salt and cinnamon. Set aside
  2. In a blender, pulse the nuts, cherries and seeds until roughly chopped. Add to the oat mixture and mix 
  3. Melt the oil, butter, honey and syrup in a saucepan until thoroughly combined 
  4. Remove from heat, allow to cool a little and stir in the vanilla and then combine with the dry mixture 
  5. Firmly press into a greased 20x20cm baking dish 
  6. Sprinkle with a pinch of flake salt and set to ‘Air Fry’ at 160 ̊C for 25 minutes 
  7. Allow to cool and slice while it’s still warm 
  8. Place the dish in the fridge for 30 minutes and serve 

Tip: The salt flakes add a second dimension to these healthy snacks!
