Healthy Granola Bars
These Healthy Granola Bars are a nutty, wholesome snack made with oats, seeds, and dried fruit, sweetened with honey and maple syrup and finished with a touch of sea salt for extra flavor.

Ingredients

  • 1 ½ cups rolled oats 
  • ½ cup almond or oat flour 
  • 1 tsp salt 
  • ¼ tsp cinnamon 
  • ½ cup desiccated coconut 
  • 1/3 cup sugar 
  • ½ cup almonds 
  • ½ cup macadamias 
  • ½ cup pistachios 
  • ½ cup sunflower seeds 
  • ½ cup pepitas 
  • ½ cup dried cherries (or cranberries) 
  • 1/3 cup coconut oil 
  • 1/3 cup butter 
  • 1/3 cup honey 
  • 1/3 cup maple syrup 
  • 2 tsp vanilla extract 
  • Sea salt flakes 

Method

  1. In a large bowl, mix the oats, flour, sugar, salt and cinnamon. Set aside.
  2. In a blender, pulse the nuts, cherries and seeds until roughly chopped. Add to the oat mixture and mix.
  3. Melt the oil, butter, honey and syrup in a saucepan until thoroughly combined.
  4. Remove from heat, allow to cool a little and stir in the vanilla and then combine with the dry mixture.
  5. Firmly press into a greased 20x20cm baking dish.
  6. Sprinkle with a pinch of flake salt and set to ‘Air Fry’ at 160°C for 25 minutes.
  7. Allow to cool and slice while it’s still warm.
  8. Place the dish in the fridge for 30 minutes and serve.

Tip: The salt flakes add a second dimension to these healthy snacks!
