Crispy potato skins are the perfect snack or appetizer, featuring golden, air-fried potato skins topped with melted cheese and crispy bacon. Serve with chives and sour cream for the ultimate indulgence!

Ingredients

  • 4 large washed potatoes
  • 1 cup grated tasty cheese
  • 4 rashes of bacon fried crispy and diced

Method

  1. Bake the potatoes in your air fryer at 190°C for an hour then set aside to cool.
  2. When cool enough to handle, cut each potato into quarters longways and remove the flesh (you can use this for gnocchi, mashed potatoes or hash browns).
  3. Place the skins, skins side down in the air fryer, spray with olive oil and fry at 200°C for 4 minutes.
  4. Remove the tray, sprinkle with cheese and bacon bits and return to the air fryer until the cheese is bubbling.
  5. Serve with chopped chives and sour cream.

Tips: For a vegetarian option, omit the bacon.
