Chocolate Soufflés

Ingredients

  • 10 g butter
  • 20 g caster sugar
  • 200 g dark cooking chocolate
  • 60 g butter
  • 4 eggs
  • 50 g caster sugar
  • 1 pinch of salt

Method

  1. Butter the inside of the soufflé moulds and sprinkle with sugar. Lightly tap the moulds upside down on a board to remove any excess sugar. Place the moulds in the fridge while you prepare the pastry.
  2. Break the chocolate into pieces and add to a bowl. Add the butter. Melt in the microwave then stir to obtain a smooth and uniform texture.
  3. Separate the egg whites from the yolks. Place the egg whites into a mixing bowl. Set the yolks aside in a small bowl.
  4. Preheat the oven. Turn on the appliance. Select the BAKE program at 180°C and set the cooking time to 5 min. Press START.
  5. Meanwhile, using an electric mixer, beat the egg whites until stiff. When they become fluffy, add the salt while continuing to whisk. Once firm, pour the sugar in a continuous stream while whisking.
  6. Add the yolks to the bowl containing the chocolate/butter mixture and mix vigorously to obtain a smooth texture. Gently fold in the egg whites with a spatula.
  7. Pour the batter into the moulds and place them on the baking tray. Put the baking tray in the middle position in the oven.
  8. Turn on the appliance. Select the BAKE program at 180°C and set the cooking time to 17 minutes. Press START.
  9. Serve immediately. Serve with a seasonal fruit salad or whipped cream.
