Ingredients

  • 80g whole milk
  • 20g caster sugar
  • 1 tsp dry baker's yeast
  • 200g T55 flour
  • 2g salt
  • 10g oil
  • 1 egg
  • 10g soft butter
  • 20g icing sugar
  • Cooking oil spray

Method

  1. Warm the milk in the microwave to between 38°C and 40°C. Make sure that the milk is not too hot as this could deactivate the yeast. Place the yeast to be rehydrated in a small bowl with the warm milk. Whisk to combine. Leave to stand for 3 minutes. The yeast should be dissolved.
  2. Pour the flour and salt into a recipient. Add the oil, egg and milk/yeast/sugar mixture. Knead by hand for 1 minute, then add the soft butter and knead until the dough comes together slightly (about 2 minutes). The dough should remain sticky. Cover with a clean cloth and leave to rise for 2 hours. It should triple in volume.
  3. Turn out the dough onto a floured work surface and gently roll out to a thickness of about 1.5 cm. Cut out the doughnuts using a 7 cm diameter round cookie cutter. For the centre, use a 3 cm cutter. If you don't have a cookie cutter, use a bowl or glass the right size.
  4. Transfer the doughnuts to lightly oiled squares of aluminium foil. Cover with a clean cloth and leave to rise until doubled in size (about 30 mins). Before baking, gently brush the doughnuts with a little neutral oil using a pastry brush.
  5. Place them in the appliance. Start baking on cookie program for 8min at 180 degrees.
  6. Check if necessary to ensure a golden brown colour. Leave to cool on a wire rack, then dust with icing sugar.
