Ingredients

  • 800 g small new potatoes
  • 200 g feta
  • 100 g pickled red pepper from a jar
  • 150 g Greek-style yoghurt
  • 10 drops of Tabasco® sauce
  • 1 chopped shallot
  • 1 large clove of chopped garlic
  • 4 tablespoons of chopped fresh chives
  • 4 tablespoons of chopped parsley
  • 10 cl olive oil
  • Salt, pepper
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of garlic powder
  • 1 tablespoon of spice mix for potatoes

Wash the potatoes thoroughly with a small brush in cold water. Fill the water tank. Place the potatoes in the Easy Fry with the standard tray and start the STEAM programme at 100°C for 45 minutes.

Make the ktipiti sauce. In a bowl, mash the feta with a fork. Place the feta, drained marinated peppers, Greek yoghurt and Tabasco in a blender. You can adjust the amount depending on your taste. Blend for 1 to 2 minutes to obtain a smooth, even sauce. Set aside in the fridge.

Make the herb oil. Mix the chopped shallot and garlic, chives, parsley, olive oil, salt and pepper in a bowl. Set aside.

Remove the potatoes from the Easy Fry and place them on a baking tray or chopping board. Leave them to cool slightly.

Using a coaster, gently mash your potatoes to flatten them into fairly thin patties. Season with paprika, garlic powder and spice mix for potatoes.

Place them in the Easy Fry with the standard tray, then start the FRIES programme at 180°C for 20 minutes.

Make several batches if necessary (depending on the size of your potatoes).

Put some of the ktipiti sauce on a plate, place the potatoes on top and drizzle with the herb oil.
