Ingredients

  • 1 cup milk
  • 55g caster sugar
  • 2 ¼ tsp yeast
  • 375g flour
  • Pinch of salt
  • 800g beef cheek
  • 1 tbsp oil
  • Salt and pepper
  • 1 cup beer
  • ½ cup BBQ sauce
  • 3 tbsp Kecap Manis
  • 2 tsp Chinese 5 spice
  • ½ tsp cayenne pepper

Preparation

Rub the beef in oil, salt and pepper.

Brown beef in a hot skillet on all sides over medium heat

Place beef in a pressure cooker and add the beer, BBQ sauce, sweet soy sauce, spice and pepper. Set to Pressure cook for an hour or until the meat easily falls apart

Pull the beef cheek with two forks and allow it to rest in its sauces.

For the buns: In a bowl, add the milk (warm to lukewarm) with the sugar and yeast and rest for 5 minutes

Add the flour and salt and knead for 5 minutes then cover and rest for 1 hour

After the hour, divide the dough in 8. Roll out each dough piece to form a 15cm circle

Place a heaped tbsp of pulled beef in the middle and fold up the sides to seal the parcels

In the air fryer, steam the buns for 16 minutes

Allow to cool for 5 minutes before serving.
