Ingredients

  • 1 large Eggplant
  • Olive oil
  • 250ml Neapolitan Sauce
  • 1 cup grated mozzarella cheese
  • 1 tbsp grated parmesan cheese

Start the air fryer’s Grill program to preheat.

Slice the eggplant longways, around 1 cm thick

Brush the eggplant slices with olive oil.

When air fryer is done preheating, place the oiled eggplant slices onto the hot grill

Air fry at 200 ̊C for 4 minutes on each side

Remove the eggplant from the air fryer and place two slices in the accessories pack’s pizza tray.

Spoon 1 tablespoon of Neapolitan sauce over each slice then top with ¼ of the mozzarella.

Cover these with the remaining two slices of grilled eggplant.

Top these with the remaining sauce and mozzarella

Finally, sprinkle with the parmesan and bake at 200 ̊C for 6-8 minutes. The cheese should be melted and golden.
