Ingredients

  • 1.5 kg pork belly
  • 2 tbsp red wine vinegar
  • 1 tsp fine salt
  • 4 cloves garlic, peeled and bruised
  • 2 sprigs of thyme
  • 2 tsp flake salt
  • 330mL apple cider

With a very sharp knife, score the fat of the pork belly in 1cm increments

Rub in the vinegar and fine salt

Place in the refrigerator uncovered for 4 hours

Remove the grill plates from your air fryer basket

Rub a little oil onto the basket base and cover with the pork belly, fat side up

Place 2 garlic cloves and 1 sprig of thyme next to each long side of the pork belly

Air fry at 200 ̊C for 35 minutes

After 35 minutes, pour the apple cider into the basket with your pork belly inside. Make sure you pour on the side, avoiding the pork belly to preserve that crispy skin

Now bake again for 90-120 minutes at 180 ̊C. 90 minutes if you like a little gelatinous fat and 120 minutes if you prefer your pork belly dryer

Allow to cool for 5 minutes before serving.
