Butterfly the chicken breasts and cover them with cling wrap. Using a mallet or rolling pin, gently beat to flatten the breasts
Wrap each stick of Emmental with a slice of smoked ham
Place the ham and cheese on one side of the flattened breast and add a pinch of dried tarragon. Wrap the opposing side of the breast over the ham and cheese and seal the Cordon Bleu parcel.
Coat each Cordon Bleu parcel first in flour, then egg, then breadcrumbs
Rest for a few minutes allowing the crumb to seal the parcels
Spray with olive oil spray and set to “Air Fry” for 18 minutes at 180 ̊C
Allow to cool and serve with a side salad.
